GENU PECTIN
Pectin is a heterogeneous anionic polymer extracted from the rind of citrus fruit. It is composed of a linear chain of α (1→ 4) linked D-galacturonic acid residues. These building blocks of polygalacturonic acid can be esterified and present as the methylesters and the free acid groups. High methylester pectin requires a minimum amount of soluble solids and a pH around 3.0 or lower in order to form gels.
Pectin exhibits bioadhesive properties and can be formulated as a solution, gel, or film to be used in syrups, suspensions, lozenges, tablets, and capsules.
